Ingredients:

  • 4 cup brussels sprouts, halved
  • 2 Tbsp olive oil
  • Salt to taste
  • Pepper to taste
  • 2 avocados sliced

Directions:

  • Heat oven to 400 degrees.
  • In a small bowl, toss brussels sprouts, olive oil and salt and pepper.
  • Place on baking sheet and roast for 35 – 40 minutes, shaking pan every 5 – 7 minutes.
  • Remove from oven and allow to cool slightly.
  • Top with avocado and serve.
  • Serves 4.
