Ingredients:

  • 2 eggs
  • 1 cup chopped mushrooms
  • 1 cup spinach leaves
  • ΒΌ cup Feta cheese
  • 1 tablespoon butter

Directions:

  1. In a bowl, combine eggs and chopped mushrooms and spinach leaves. Whisk well.
  2. In a frying pan, heat 1 tablespoon butter.
  3. Pour the egg mixture in the pan. Flip carefully after 1 minute.
  4. Add cheese on the top. Cook for another minute with the lid on.
  5. Serve hot.
